Title : End-to-end agro-food technologies based on raw materials bred in Saratov
Abstract:
End-to-end agro-food technologies mean cultivating raw materials with specific properties, optimal for the production of specific products, which, in turn, are targeted at a specific consumer category. In the "field-to-fork" chain, the "breeding" system, where the quality of raw materials is determined, is unfairly overlooked. Breeding a variety isn't enough; it's important to determine its intended purpose. However, the potential of varieties isn't fully realized in production conditions. Therefore, our concept is to develop formulas and technologies for functional products based on modern bioresources bred in Saratov. End-to-end agricultural and food technologies are being developed based on modern advances in plant breeding. Varieties are being designated based on their technological properties, and criteria for selecting raw materials for the production of products with specific properties for a specific population are being defined. The result of this development is the determination of the technological purpose of crop varieties and the scientific and economic justification for the placement of crops capable of producing high-quality raw materials. In a closed production cycle, the “field-to-counter” principle is expanded to “selection-to-field-to-counter”, i.e. the main quality of the raw material, laid down by selection with a predetermined technological purpose, is taken into account, and not the actual quality of the raw material, which does not meet the requirements of the technological process. The paper presents the results of our research, developed recipes and product technologies.
